Rejuvelac (fermented wheat berry juice) is usually made with just wheat. This recipe uses several kinds of grains for a more diverse microbial mix for probiotics for the body. We have a glass of this each morning before eating and each evening before bed. You can also have a glass a few minutes before your lunch if you like. We mix it with a little fruit juice to make it taste better, but you can drink it straight. We do not waste the grains after we decant the rejuvelac we make a delicious and nutritious porridge for breakfast *(see recipe below)
We use a mixture of these whole grains in equal amounts: Oat, Rye, Quinoa, Brown Rice, Spelt, Barley, Wheat, Amaranth, and Millet. We like to use all of the grains above, but if you do not have all of them try to at least use 5 or 6 different kind for the best results and diverse nutrients.
Note: You can mix 1 cup of each kind of grain together well in a large airtight container to have on hand when making the rejulevac. We keep ours in the refrigerator. Just measure out 1 cup each time of the mixed grains then follow the recipe below.
1 Cup of whole mixed grains
4 Cups filtered or spring water
1 large mouth glass jar (at least 5 cups)
Rinse the grains under running water to remove any debris. Add the grains to the jar and pour the water in the jar. After 24 and up to 48 hours decant the liquid and put in the fridge until ready for use. You can drink it immediately. Use up to 1 cup per person per day before meals. We usually have before breakfast and mid-afternoon. You can cut the recipe in half if you desire to have less rejuvelac or double the recipe if you need more for your family and friends.
*Cooking the Grains for Porridge:
Once you have decanted the liquid from the grains. Place them in a sauce pan and add enough water or coconut milk to cover about 1 inch above the grains. Then put on medium low heat to cook and a pinch of sea salt if desired. Stir often while cooking for about 15 minutes or until tender, but still firm. You can reheat the next day too if any is left over just add a little more liquid and stir until hot. Serve with fruit and your favorite milk and honey if you want to sweeten it. It’s also good with raisins or other dried fruit, seeds, and nuts, just add them while you are cooking the porridge.
